 How to make kuzhi paniyaram with store-bought dosai batter?

Kuzhi paniyaram is a South Indian dish which can be made both as a sweet or a savoury.
These can be served as breakfast or evening snack.
Though, it takes some time and effort to prepare the batter in the first place, it’s not very complicated.

Here’s an easy guide to make kuzhi paniyaram with the store bought dosai/ idly batter within few minutes.

As I told above, the paniyaram can be made in both sweet and savoury version. The batter preparation are different white the cooking process is the same.

INGREDIENTS REQUIRED:


Sweet :
  • DOSAI BATTER - 1 CUP
  • JAGGERY - 1/2 CUP
  • WATER - 2 TBSP
  • OIL
  • SALT - 1/4
Savoury :
  • OIL - 3 TBSP
  • MUSTARD SEEDS - 1 TSP
  • URAD DAL - 1 TSP
  • FINELY CHOPPED GINGER - 1 TSP
  • FINELY CHOPPED GREEN CHILLI - 1 TSP
  • FINELY CHOPPED ONION - 1/4 CUP
  • FNELY CHOPPED CURRY LEAVES
  • SALT - 1/4 TSP

INSTRUCTION:

Batter preparation

Sweet:
  1. To make the jaggery syrup, add the jaggery to a pan and add the water and let it come to boil.
  2. Stir the mixture till everything dissolves.
  3. Once it boils, turn off the stove and set it aside.
  4. Take a cup of batter at room temperature in a bowl and add required salt and mix it together.
  5. Now, strain the jaggery syrup and add it to the batter and mix well.
  6. Adjust the sweetness according to your taste.

Savoury:
  1. To make savoury version, switch on the stove and place a pan.
  2. Once the pan is hot, add the oil. Once the oil is hot enough, add the mustard seeds.
  3. Let the mustard seeds pop, add the urad dal, curry leaves, green chilli and ginger.
  4. Once they’re all fried, add the onion and saute it for few mins till it becomes translucent or golden brown.
  5. Turn off the stove, add this to a cup of ready-made dosai/idly batter.
  6. Add salt (optional) and mix the batter well.

Paniyaram preparation :

  1. Switch on the stove and place the kuzhipaniyaram vessel on top. Let it become hot at low to medium heat.
  2. Add 1/2 tsp of oil to all the curvature/ kuzhi.
  3. Once the oil is hot, add 1 - 1 1/2 TSP of the mixed batter in all the kuzhis.
  4. Close it with a lid (optional).
  5. Let it cook for a min or 2. The with the stick turn it around and let it cook till both sides are golden brown in colour.
  6. Repeat steps from 2 to 5 for more paniyarams.
  7. Take the from the paniyarams from the hole and serve hot.

NOTE:
  • Paniyaram should be cooked at low to medium temperature.
  • If you’re using nonstick pan, no need to use oil except for the 1st time.
  • Savoury type can be served with coconut chutney or Tomato chutney .
