How to make delicious Coconut milk rice at home ?

Have you ever tried coconut milk rice at home? Do not worry !

Here’s a simple and delicious way in which you can make coconut milk rice at home. 
This coconut milk rice can be served as such or it can also be combined with any spicy side dish or curry.
You can also make Nasi Lemak #nasilemak with this.






Let’s get to the recipe…










Ingredients required : 

OIL - 2 TBSP

BAY LEAF - 1

CLOVE - 5

CINNAMON STICK - 1 INCH PIECE

SLICED ONION - 2

GINGER GARLIC PASTE - 1 TBSP

GREEN CHILLIES - 3

CASHEW - A HAND FULL (OPTIONAL)

TURMERIC POWDER - 1/4 TSP

SOAKED RICE - 1 CUP

COCONUT MILK - 2 CUPS

SALT - AS REQUIRED


INSTRUCTION :

There are 2 things to prepare before we begin.
  • Wash the rice thrice and soak it for 15 minutes.
  • Prepare coconut milk. Instruction is given below.
  1. Switch on the cooker and place a pressure cooker on top of it.
  2. Add oil to it once the cooker is hot enough.
  3. Add the bay leaf, cinnamon stick and cloves. And let the cloves pop.
  4. Add the cashew to it and sauté till the become golden in colour.
  5. Add the sliced onions and saute till it turns translucent or golden brown in colour.
  6. Add the sliced green chillies and mix them well.
  7. Now, add the ginger garlic paste and mix them well.
  8. Add turmeric powder and add the prepared coconut milk.
  9. Add the soaked rice and add required amount of salt and mix them for one last time and close the pressure cooker.
  10. Let this cook at medium temperature till 1 whistle.
  11. Turn off the stove and let the pressure go down completely.
  12. Open the cooker carefully and mix the rice from bottom to top carefully without breaking the rice. This is a crucial step so be very careful.
This mixing of the rice after cooking is very important because the coconut milk would have settled on top.


How to make coconut milk :

Don’t worry if you don’t have a store bought coconut milk. You can always make them at home. All you need is some coconut and a blender or food processor.


  • Break open the coconut and drain the water separately. (We don’t need this water).
  • Make small pieces of the coconut pulp (the white coloured portion is the pulp) with a help of a knife.
  • Make small cubes so that its easy to grind them.
  • Transfer the pieces to the blender jar and blend them as such till they become soft and powdery.
  • Add 2 cups of water and blend them well till they’re blended together as one like milk.
  • Strain this milk using a muslin cloth or a stainer into a separate bowl.

NOTE : 

You may also substitute some of the coconut milk for water, depending on your sweetness requirement.
